An unexpected sweet treat from the Aligoté grape. Sweets for adults! The spectacular diversity of the preserved
fruit aromas: quince, figs, apricot blended with a slight curried spice nose. Its length on the palette is extraordinary !
Hand picked harvest where the grapes are very carefully selected and delicately put in small wooden boxes. This is followed by 6 months of ‘concentration’ in the tower of the Château de Chamilly.
What is left is a very syrupy nectar that is extracted by pressing slowly and carefully over 18 to 24 hours.
After the fermentation there is a little over 100g/L of residual sugar that is perfectly balanced with the acidity of the Aligoté.
