Montagny Premier Cru – Les Burnins


Tasting note :

Taking its name from the Benedictine monks of Cluny who, dressed in their monks habit (robe de bure) worked this parcel of vines. They had recognised it as one of the very best of the appellation.
Generous and complex, it is a great terroir.


Élaboration :

Harvest and grape selection done by hand and transported in small boxes to the cellar.
The ‘must’ is racked after settling for 12 to 24 hours. The fermentation is temperature controlled.
Fermentation and ageing is done in Burgundian oak barrels. The wine is filtered before bottling.

Feuilleté of salmon with tarragon.
