Dégustation :

Un des plus haut terroirs du village. Des fruits frais comme la griotte et la fraise des bois, une pointe de réglisse et toujours une belle fraîcheur typique de ce plateau Nord-est.

 

Élaboration :

Harvest and grape selection done by hand and transported in small boxes to the cellar.
Vinification takes place over 12 days in temperature controlled vats with a pre-fermentation cold maceration over 3 to 5 days.
The juice is either pumped over or the cap is punched twice a day dependant on the stage of the vinification.
Ageing for 18 months: 12 in oak barrels and 6 in tank.

Food and Wine Pairing :

A perfect accompaniment to meat with sauce, as well as with cheese.
